It’s back to school time and that means healthy easy lunches!
After commuting to college 3 years and teaching the past month, there are a few things you need whether you are 8 or 28 for healthy school lunches.
- A nice cooler or lunchbox. I personally love my little black lunch box because it can fold onto its self when empty and still keeps things safe and cold when full.
- Thermos – I personally like the one in the picture above because you can put Greek yogurt, oatmeal, or anything really. A tall thermos is nice for teas and soups though.
- BPA Free Tupperware — Target occasionally will have these even in the $1 bins. They are usually kid-themed, but it’s so affordable. I also found these cute lunch boxes from Goodbyn with compartments. Has anyone tried these?
- BPA Free Water bottles. I hate washing one each night, so I pick them up whenever they are on sale somewhere.
Favorite Easy Healthy Lunches & Snacks
I love Greek yogurt, oatmeal, celery and carrots with peanut butter, Shakeology, leftovers, and salads, but I eat them all very frequently. So I asked my friends for suggestions, and they had some great ones.
Shauna, a friend in our fitness accountability group, suggested a salad with grilled veggies ,whole wheat couscous, low-fat feta, with fresh lemon dressing. It can be served hot, cold, or room temperature.
Another friend suggested Easy Boxed Lunches. It is a website with all kinds of different ideas. This one has a hard boiled egg, whole wheat crackers, and fruit with cheese.
I saw this one and instantly, my mouth watered. Strawberries and graham crackers, pasta, meatballs and cheese make one healthy lunch for any age.
This last one is an egg salad wrap on whole grain tortilla on top of a bed of lettuce with a few onion, cucumber & tomato bits.
