Last week we went to California to visit one of our coaches and friend, Judy from All in the Balance. She is a cooking pro – she will zoodle pasta, create 4-5 course meals, and just pretty much everything but what I do. I’m such a simple “cook”. Like browning hamburger, so when she suggest the Oh She Glows Cookbook earlier, I totally blew it off.
After sipping on a glass of water and an yummy, grapefruit Sauvignon Blanc from New Zealand, she broke out a few of her cookbooks though because after all, I do like healthy recipes if they’re easy enough to make.
I need SIMPLE…like we have “bunless burgers” 1x a week which is just browned hamburger with veggies, ketchup and mustard simple.
Needless to say, I was pretty hesitant though especially after seeing the whole book was vegan. I remembered reading Angela’s blog, Oh She Glows, back in 2010 when SoreyFitness started though. She had some great posts, and I really related to her personality.
So I decided to flip through her copy of Oh She Glows Cookbook, it actually looked really good.
So good in fact, I ordered me a copy while still in California. Thank goodness for Amazon Prime, right?
After looking over the whole book, the recipes aren’t as easy as “bunless burgers,” but honestly – what else is? And you can only have baked chicken or browned hamburger meat so much before just being over it. So I took on the challenge of actually cooking things with real ingredients.
While several recipes caught my eye, I started with the black bean & avocado enchiladas!
Each recipe in the Oh She Glows Cookbook outlines how long it will take to prep and cook. I really liked that she outlined it like that, but being a relative newbie to cooking it took twice as long for me to make. The book said 20 minutes to prep, but it took me about 40.
The enchiladas also had sweet potatoes in them which I microwaved over boiling. This saved me some time, and it worked really well. (yay! Win for Kalee!)
How Did Vegan Go Over?
I was so excited as I pulled them out of the oven and started topping with the avocado cilantro topping!! They didn’t disappoint either! Jake and I both loved them!
It made 5 servings as well so we had leftovers (which helped me justify the hour in the kitchen all said and done).
The only thing I’ll change up is less onion. The onion was tasty in it, but where we live in a small house – it stankkkkkk! Maybe in a larger house it wouldn’t, or maybe a less strong onion, but it was a little rough coming from a non-cooking household. :P
Final Verdict: The Oh She Glows Cookbook is awesome! I would recommend it to anyone needing a change.
The enchiladas are one of my favorites, but overall Oh She Glows Cookbook has a good variety and pretty easy-to-find ingredients. They also are realistic meals for someone that is just getting into mixing in some meatless meals. While this was a vegan recipe, it really left both of us really full and satisfied!
