This year Jake and I shared a family birthday party because our birthdays our about a month apart. We have a party for everyone’s birthday with dinner and cake almost every month. We did white chili and white on white cake this year! It is probably my favorite tradition even over any Christmas party; it is a way to get together every month with the people that matter the most to me. :) I love having a
crazy close close knit family.
I love this picture of both of us. I look like I’m channeling my inner-little princess with cake, and Jake looks like he’s getting into trouble. There is no doubt my grandmother just said something to get him tickled.
We had 2 huge white-on-white cakes, so for dinner, we made White Chili. It was a huge success. After my not-so-health-nut grandparents tried it and loved it, we even got them to try hummus from last week’s Whole Foods trip. :)
1 package of ground turkey
1 can of kidney beans (Kroger’s Organic are my favorite)
1 can of chick peas
1 can of chili beans
1 large onion chopped
3 cans of whole tomatoes
1 tsp chili powder
Salt & Red Pepper to taste
Cook your turkey first with the onion. Once it is browned, mix all of the ingredients together and let simmer on low heat for 2-4 hours.
I absolutely could eat white chili every day from October to February! It’s a great way to get in your lean protein and veggies. What about you?
