I read a lot of blogs that are centered around health and fitness, and they always talk about their day and what they are eating. A typical day of eating looks pretty healthy, but I leave room for special meals here and there. One being this amazing Chicken Spaghetti recipe!
Just a warning, they are such better cooks than I am!! I’ve decided to at least try a similar type post. I hope I don’t bore ya’ll to tears, and if I do–please let me know in the comments section. I have tough skin! :)
Breakfast is usually my favorite meal of the day if I’m fixing every meal! Today I had Chobani plan Greek yogurt mixed with Bare Naked Granola, strawberries, blackberries, and blueberries! I also added just a squirt of honey. YUM!
I also am trying to do better on my water intake, so I have one big glass before eating and then sip while I enjoy my parafait and watch a little bit of the Today show.
School & Blog Time! Right now I am currently going to graduate school to become a high school math teacher. I just finished up my first semester this morning after writing up my reflection for my Innovative Technology in the Classroom. :D It’s all online so it took me some getting use to, but I like doing my homework in pajamas anytime of the day or night.
I actually have a job interview Friday so cross your fingers for me please!! I have been praying and polishing my interview skills for it!
By Lunch my creativity lacked even knowing I was going to do a post like this. I broke down and had a peanut butter and jelly with fruit as dessert. I just found a recipe for a smoothie I am going to try tomorrow: vanilla protein, orange juice, banana, mango, and strawberries.
Izzie keeps me busy and happy during the day too. She loves when I fix peanut butter sandwiches because she gets to lick the knife :)
Tonight I am making Chicken Spaghetti! It is one of my favorite warm, comfort foods, and one of the recipes I know people love. I’ll let you know how it turns out but here’s the recipe (it isn’t healthy though so watch the portions)
1 cup onions
1 green pepper, diced
3 cups celery, diced
1 can tomato soup
1 can mushroom soup
1 cup butter (or margarine), melted
1 cooked chicken, diced
1 pint jellied chicken broth
1 pkg thin spaghetti, cooked
cheddar cheese, grated
- Brown chopped onions, pepper, and celery in 1 cup melted butter.
- Add soup and chicken broth.
- Add chopped chicken and pimiento. Season to taste with chili powder and Worcestershire.
- Stir in cooked spaghetti. Pour into dish. Top with grated cheese.
