Yesterday I told ya’ll Jake and I were going to a reception for some friends that got married in Mexico. They celebrated there with a 9-day honeymoon and topped it off with the reception back at home. I have always dreamed of a beach wedding. I know that my whole family may not be able to come to the ceremony, but the reception would allow them to see us and keep the wedding day sort of intimate. I also know the weather would worry me–what if it rains?!! I want to get married outside though so I know it will always be in the back of my mind. While I am not even engaged, I have seen a beach wedding at the resort above. This picture is from Adventrua Spa Palace–so gorgeous! They even shoot off fireworks! It’s also cheaper than a typical wedding in Tennessee which I love :)
Before we left for the reception, I decided to tackle making a Healthy Oatmeal Raisin Cookie recipe! SO excited about this one! :) You can eat the dough raw OR bake them!
Healthy Oatmeal Raisin Cookie Dough (Eat OR Bake!)
3/4 Cup Earth Balance
1/8 Cup Stevia
1/2 Tbsp Flax
3 Tbsp Water
3/4 Cup Whole Wheat Flour
1 and 1/2 Cup Oats
1 Tsp Cinnamon
1 Tbsp Vanilla
Raisins/Dried Fruit (I did dried pomegrantes and raisins!)
Mix the first 3 ingredients together. Then add the flour, cinnamon, nutmeg, and vanilla in slowly. Once the batter is mixed, stir in oats and dried fruit. Eat! Or Bake at 350 for 7 minutes. Makes 1 1/2 dozen.
