What You’ll Need:
- 5 Cups of Mixed Greens
- 2 Sweet Potatoes, baked, cool, and diced
- 1 cup cannellini beans
- 1 cup diced cherry tomatoes
- 1 diced avocado
Dressing:
- 1/2 cup almond milk yogurt
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Salad Variations
If you prefer, you could also use black beans instead of cannellini beans.
How to Make This Dairy Free Gluten Free Salad
- Prep your sweet potatoes by baking, cooling, and dicing them.
