What You’ll Need:

  • 5 Cups of Mixed Greens
  • 2 Sweet Potatoes, baked, cool, and diced
  • 1 cup cannellini beans 
  • 1 cup diced cherry tomatoes
  • 1 diced avocado

Dressing:

  • 1/2 cup almond milk yogurt
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Salad Variations

If you prefer, you could also use black beans instead of cannellini beans.

How to Make This Dairy Free Gluten Free Salad

  1. Prep your sweet potatoes by baking, cooling, and dicing them.
  2. Then dice your tomatoes and avocado.
  3. Assemble the salad starting with the lettuce. Then add in your sweet potatoes, tomatoes, avocado.
  4. Combine the almond milk yogurt, apple cider vinegar, and salt and pepper to make the dressing.
  5. Top the salad with the dressing and gently toss it.
