This Strawberry Pecan Farro Salad is delicious and satisfying! It packs greens, whole grains, strawberries, and avocado to make a great healthy lunch or dinner option! It’s also a great side dish for a potluck dinner!

We absolutely love this salad! It feels like such a treat, and it’s also really good for you! 

We follow a Mediterranean Diet mixing in Blue Zone foods as much as we can!

This salad contains 5 amount of Blue Zone foods including farro, nuts, lime, berries, and avocado.

Strawberry Salad Ingredients

  • 1 cup cooked farro, cooled
  • 5 oz container of mixed greens (arugula and/or baby spinach)
  • 1 cup sliced cucumber
  • 1 pint sliced strawberries
  • 1 diced avocado
  • 1/2 cup toasted pecans or the pecan brittle (recipe below)
  • 1/2 cup crumbled feta cheese

Strawberry Farro Salad Dressing

  • 1/2 of a small jalapeño, deseeded and minced
  • 1/3 cup olive oil
  • 2 tbsp lime juice
  • 1/2 tbsp honey
  • 1 tsp salt

Pecan Brittle Ingredients

  • 1 cup pecans, roughly chopped
  • 1/2 cup pumpkin seeds
  • 1/4 cup maple syrup
  • 2 tsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper

How to Make This Super Food Strawberry Salad

  1. If you’re making the pecan brittle, this is your first step (and so worth it). Preheat your oven to 275˚F. Mix all of the brittle ingredients together until combined. Spread onto a small baking sheet lined with parchment paper. Bake for 35 minutes and let cool. When it’s cool, break into small pieces.
  2. As your brittle bakes, cook your farro according the package’s directions and let cool.
  3. In a separate bowl, combine all of your dressing ingredients together using a whisk.
  4. Combine all of the salad ingredients into a large bowl. Mix in the dressing and toss gently.
  5. Top with the pecan brittle.

Could you add a protein to this dish?

You could absolutely add in chicken breast to make this a full, higher-protein lunch or dinner option.
