I have become slightly obsessed with finding new, healthy things to add to my new meal plans, and these Sweet Potato Oat Bars looked so good and new!

Sweet Potato Oat Bars by The Eat Clean Diet Honestly, I have had enough salad, eggs, and plain chicken to choke a horse, and I am ready for a change. Do you ever get that way? I feel like getting stuck in a diet rut is the main problem in our fitness accountability group.

Ingredients for Sweet Potato Oat Bars by The Eat Clean Diet

I am not a foodie, and if it is more than a bowl of oatmeal I can’t create a successful recipe unless it’s modifying a dessert to make it healthier. (Healthy Oatmeal Raisin Cookie Dough recipe here) This recipe was originally on the Eat Clean Diet‘s website. I love their website, and you should definitely check it out. I used coconut oil instead of butter and mixed in raisins, pomegranates, and cherries. If you aren’t sure on the diet check out my Eat Clean Diet Guide.

Sweet Potato Oat Bars **Recipe from The Eat Clean Diet**

1 tbsp olive oil
5 sweet potatoes, washed and trimmed of fibers
4 cups oats (3-5 min kind)
3/4 cup skim milk
1 tbsp lemon juice
1/4 cup ground flaxseed
2 tbsp pumpkin pie spice
2 tbsp coconut oil
1/2 cup dried fruits (raisins, dates, cherries, blueberries) chopped
1/2 cup raw unsalted nuts (almonds, walnuts) chopped
pinch sea salt
1/2 cup maple syrup (natural preferred, I used lite calorie)

1. Preheat oven to 350 degrees F. Prepare a 9″ by 13″ (1″ deep) baking dish coated lightly with olive oil
2. Prick sweet potatos all over. Place in oven and bake until tender (~40 mins-1 hr). Remove from oven and let cool. When cool enough to handle, remove potato peels and place flesh (insides) in large mixing bowl. Leave oven on and set heat to 400 degrees F.
3. Add all remaining ingredients to sweet potato mixtures and mix well.
4. Press into prepared baking pan. Bake for 30 to 35 minutes or until golden on top.
5. Remove from heat and let cool. Cut into squares.

Since it makes several, I actually froze about half of the sweet potato bars for later. I just warm them up in the microwave when I’m ready for one or thaw the night before. They are good a little warm in the microwave too! ;)

  1. What is the approximate weight of the 5 sweet potatoes you used? Sizes of sweet potatoes can vary wildly at the grocery store. Thanks in advance for the help!
