This Mediterranean Salad with roasted chickpeas is ready in minutes, and it’s perfect for meal prepping or for a potluck! It’s always a crowd-pleaser!

What You’ll Need

For Roasted Chickpeas

  • 15 oz can chickpeas (drain & rinse)
  • 1/4 tsp of salt, black pepper, paprika, garlic powder, & dried parsley
  •  1 tsp EVOO oil

For the Salad

  • Bag of Spinach or Mixed Greens
  • 1/2 cup feta cheese (crumbled)
  • 2 Gala Apples (diced)
  • 1 pint grape tomatoes (cut in half)
  •  1/4 cup finely chopped red onion
  • 1/3 cup slivered almonds
  • 1 avocado, diced

Mediterranean Salad Dressing Recipe

  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp apple cider vinegar
  • 1.5 tbsp Dijon mustard
  • 1.5 tbsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper

How To Make the Roasted Chickpea Salad

  1. Place the chickpeas, seasoning & oil in a pan and cook 2-3 minutes on medium heat.
  2. While it cooks, mix all of your ingredients for the dressing together. (We use a mason jar and shake them together).
  3. Now mix the salad ingredients together in a large bowl. Top with chickpeas, feta, and dressing. Enjoy!
