Our Blue Zone Bean Salad with Chickpeas and Black Eyed Peas is nutritious, delicious, and easy to make! It’s the perfect cold bean salad for a potluck or to mix into your lunch rotation!

We are always looking for ways to get in a variety of healthy foods into our diet each week, and this colorful salad is packed with veggies! It’s also super filling and easy to assemble. We like to make a big bowl and eat it for lunch multiple days a week.

What makes this a Blue Zone Bean Salad?

The Blue Zone Diet was created after studying what people ate in places with the longest life expectancy. This Blue Zone Bean Salad contains many of those foods including Mediterranean herbs, chickpeas, black-eyed peas, olive oil, lemon (juice), tomatoes, garlic, red onion and green onions.

What You’ll Need

  • 15 oz can chickpeas, drained and rinsed
  • 15 oz can black eyed peas, drained and rinsed
  • 1 diced cucumber
  • 1/2 cup crumbled feta cheese
  • 1/2 cup diced green onions
  • 1/2 diced red onion
  • 1/4 cup minced fresh parsley
  • 1/4 cup minced fresh dill
  • 2 cups sliced cherry tomatoes

For the dressing

  • 1/2 cup extra virgin olive oil
  • 1 tsp fresh oregano
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • juice from one lemon
  • 1/2 tbsp red wine vinegar
  • 2 small pressed garlic cloves

How to Make 

  1. Combine your dressing together.
  2. In a large bowl, combine all of your other ingredients.
  3. Top with dressing all at once or dress each serving. We did all at once.

How to Store Leftovers

You can store this black eyed pea bean salad in an airtight container and place in the fridge up to 3 days.

If you place all the dressing on top like we did, it may be soggy on day 3, but it didn’t bother us. You could also add dressing each time you ate it versus all at once if you wanted.

Can I use dry herbs?

We suggest fresh herbs to keep the flavor. Dry herbs tend to taste stronger so you’d want to use smaller amounts as well. Typically, 1 tablespoon of fresh herbs is the equivalent of 1 teaspoon of dried herbs.
