Last night we made a super easy Paleo and gluten-free beef stir fry. I’m not 100% Paleo since I am in the test group for the 21 Day Fix, but I do love some of the recipes.
If you aren’t going Paleo and gluten-free, you can always have a bed of whole wheat rice with the stir fry. I personally had reached my limit of grains that my belly really likes before dinner so I skipped the rice.
Easy Paleo and Gluten-Free Beef Stir Fry Recipe
1/2 large sweet onion (the flatter the onion the sweeter it is)
1 whole yellow bell pepper
1 whole red bell pepper
1 package (about 1 lb for 4 people) of flank steak
1/4 cup sugar (this is to make the sauce a little thicker)
1/3 cup white vinegar
1/4 cup soy sauce
1 tsbp garlic (fresh preferred)
1/2 tsp salt and pepper each (or to taste)
1. Wash and slice each pepper and onion into thin strips.
2. Slice steak into 1/2 inch strips.
3. Place all sliced ingredients into a bowl and add the other ingredients.
4. Cover the bowl and let it marinate for about 1-3 hours in the refrigerator.
5. Place ghee into a pan and turn it to medium heat.
6. Drain liquid from the bowl, then place the rest of it’s contents to the pan. Cook for 10-15 minutes or until meat is fully-cooked.
Serves 4 people
Jake and I also used a little hot sauce on it too. Yum! A couple of jalapeños would be great with it if you would like a little more heat to the beef stir-fry.
Besides trying some new paleo and gluten-free recipes, I have also been following the 21 Day Fix nutrition and workout plan. I have to say I am in love with this program. After getting home from Beachbody’s Leadership Retreat, I was so off; my time management, organization, workouts, and diet were all out of control. I also knew I couldn’t get myself pumped up for an hour long workout. I just felt too stressed to give up a whole hour. Then about 2 weeks ago, I found out I had been selected to be in the 21 Day Fix Coach Test Group! I still cannot believe I was chosen. Here is a little look at my results so far:
Besides my pants fitting better, I feel so much better mentally and physically. I feel like I am back in control of everything. :) I can’t give details on the program since the 21 Day Fix isn’t out yet, but I am working out only 30 minutes a day and eating the same amount of calories as I was before starting the program.
