Can you eat shirataki noodles on keto diet?
Where can you find shirataki noodles?
Most grocery stores will have them, and I know most Walmarts do! You can also order them off of Amazon, but you usually have to buy a couple of packages at once.

How do you cook shirataki noodles?
Cooking shirataki noodles can be a little scary at first, but it’s really simple once you get the hang of it! The main things are you want to rinse them first and then make sure they’re really dry before adding to your sauce.
Steps to Cooking Shirataki Noodles (Including Miracle Noodles)
- Boil a pot of water
- Then rinse the noodles 2-3 minutes
- Put the noodles in the boiling water for 2-3 minutes
- Strain them and put them in a dry pan
- On medium heat, stir them for a minute or so. (They shouldn’t stick).
How to Make Keto Mac and Cheese Without Cauliflower
You’ll need:
- 1 cup almond milk
- 1/4 teaspoon xanthan gum
- 1 teaspoon salt
- 1/4 teaspoon white pepper
- 1/2 teaspoon dried mustard powder
- 1 cup shredded cheddar cheese, divided
- 2 Tablespoons avocado oil
- 1 package (14 ounce) Shirataki noodles
Now to Make Your Low Carb Mac and Cheese
First, we’ll make the keto mac and cheese sauce.
In a medium size pot on low heat, add your almond milk and let it simmer. Add in your xanthan gum on top and whisk is constantly.
Then stir in your salt, pepper, and mustard powder gently.
Would you like to save this?
Allow the sauce to simmer 7-10 minutes stirring occasionally. It should start to thicken.
Once it’s thickened up, add in cheddar cheese and let it melt. Set the sauce aside.
Now, it’s time to make your noodles!
Rinse and drain your noodles thoroughly.
Then in a large skillet add the oil and noodles and saute’ for 5 minutes on medium to high heat.
Now, you’re ready to stir in the keto mac and cheese sauce.
You’ll want to combine both the noodles and sauce. Then pour it into an 8×8 oven-safe container sprayed with non-stick oil.
Sprinkle on cheddar cheese to finish. Place it under the broiler set to HIGH for 4-5 minutes.
Keep an eye on the cheese so it doesn’t burn. Serve hot and enjoy!
What About Cauliflower?
If you wanted to use cauliflower instead, you could. We just got burned out on it. You could skip the noodles, cook your cauliflower and just mix it instead.

Ingredients
- 1 cup almond milk
- 1/4 teaspoon xanthan gum
- 1 teaspoon salt
- 1/4 teaspoon white pepper
- 1/2 teaspoon dried mustard powder
- 1 cup shredded cheddar cheese, divided
- 2 Tablespoons avocado oil
- 14 oz package of Shirataki noodles
Instructions
- In a medium sized pot over low heat, heat the almond milk to a simmer.
- Sprinkle the xanthan gum over the top, whisking constantly.
- Add salt, pepper, and mustard powder and stir gently to combine.Allow mixture to simmer for 7-10 minutes, stirring occasionally.
- Sauce will begin to thicken as it simmers.
- Stir in 3/4 cup cheddar cheese, and melt together.
- Turn off heat and set sauce aside.
- Drain noodles and rinse thoroughly.
- Using a large skillet, heat over medium high heat.
- Add oil and noodles and saute for 5 minutes.
- Stir in cheese sauce to the noodles in the large skillet.
- Pour into an 8x8 oven safe container, sprayed with cooking oil.
- Sprinkle remaining 1/4 cup cheddar cheese on top.
- Place under broiler set on HIGH for 4-5 minutes, watching so cheese doesn't burn.
- Serve hot.
