If you mention low carb or keto to the family, they may turn up their noses, but mention tacos, and you know they will come running to the table!

What do you need to make this One Pan Keto Taco Skillet Recipe?
Well, let me tell you–
(hint…if you want to skip all the magnificent cooking details & get straight to the recipe card, scroll to the bottom)
First you’ll need a few things:
- 1 pound 80% lean ground beef
- taco seasoning (I use McCormick’s or Old El Paso)
- bell pepper
- 1 10 to 14 oz can diced tomatoes with green chilis like Rotel
- 3 cups of spinach/kale mix
- 1.5 c shredded cheddar & jack cheese
- jalapeños (optional)
- whole sour cream
“So How DO YOU MAKE this Keto Taco Skillet dish you speak of, Kim?” you ask
Start with browning your ground beef.
An iron skillet is perfect for this dish if you have one!!
Once the meat gets started, add in your chopped onion and chopped bell pepper.
I chopped both of these up pretty well, to 1. hide any strong onion flavor from Jake and 2. to hide any strong bell pepper flavor from Kalee & me.
Cook the onions and bell peppers until the onions are translucent, and the peppers are soft.
After draining the fat, stir in your tomatoes with green chilis as well as your taco seasoning packet.
To really get this Keto Taco Pie chucked full of even more veggies, I added in 3 cups of spinach.
You can do a mix of spinach & kale, but I was living on the edge already with adding in spinach to a taco dish.
After stirring the tomatoes and green chilis into your taco skillet, add in the spinach.
Cook those leafs until good and wilted.
Kids and non-spinach eaters will never know it’s in there!! (isn’t it pretty though!?)
Wait for it…here comes the cheesy goodness to this one pot cheesy taco skillet!!
After the spinach has cooked down, top the skillet with your shredded cheese!!
You can opt to cover it, so that it’ll melt more quickly.
Personally, I didn’t because I don’t like the condensation on the lid to land on my cheese, so I just turned down the burner to low and let the cheese melt without the lid on.
Remove from heat and top with jalapeños and avocado.
You can sprinkle a little lime juice over the top of the dish for flavor, plus, it helps the avocado from turning brow as quickly.
I know the pic shows a dollop of sour cream on top, but let’s be honest, that’s just for the pic. I’d recommend letting everyone do their own dolloping.
Now, time to eat up!!
You can let everyone pick their own way for fun. I chose to do a burrito with Ole Extreme Wellness High Fiber/Carb Lean flour tortilla.
It’s a great low carb choice, and they taste amazing!!
I like to squeeze a little more lime on mine and add a spoonful of sour cream to mine, too.
Kalee & Jake made burrito bowls by tearing the tortilla up and spooning the keto taco pie over the top.
Additionally, you could serve over lettuce and/or cauliflower rice for more great low-carb options and a chance to get in more veggies!

Is Hamburger Meat Good on Keto?
Sure!! While on keto, you’re watching your net carbs. Hamburger meat has 0 carbs, so while it’s perfect for keto-ers & low-carb-ers, we also wouldn’t just eat red meat for every single meal either, so remember – everything in moderation.
But yep, ground beef is a good choice of protein for those doing keto or low-carb diets.
What are the best low carb meals?
Well, I’m glad you asked!! I’ll give you a link to some ideas, but in general, you want to stick with a protein, like eggs, a healthy fat, like avocado, and a veggie or two won’t hurt, but pick one that isn’t starchy, say like bell peppers.

- One pound ground beef
- 1/2 cup chopped onion
- 1 medium green bell pepper chopped
- 1 10 to 14 oz can diced tomatoes with green chilis
- 1 packet of taco seasoning
- 3 cups of spinach/kale mix
- 2 c shredded cheddar & jack cheese
- Whole sour cream
- Start browning the ground beef
- Add in the chopped onion and chopped bell pepper. The burger doesn't have to be completely brown at this point because it will continue to cook.
- Cook mixture until the onions & peppers are soft
- Drain fat
- Stir in tomatoes/green chilis
- Stir in taco seasoning packet
- Add in spinach and cook into well wilted
- Top with cheese
- Turn heat down to low, allow to simmer until cheese is melted
- Top with jalapeños & chopped up avocado
- Sprinkle lime juice over the top to flavor & protect the avocado color
Serve as a burrito, a burrito bowl, over lettuce mixture, over cauliflower rice, or as taco. Have fun with your creation.
