Keto Bacon Avocado Chicken Salad No Mayo Recipe

This yummy Keto Bacon Avocado Chicken Salad makes the perfect lunch or dinner on a low carb diet! Plus it’s so simple and quick to make! We love chicken and avocado recipes, but this one has to be the best!

I like to follow something similar to the 131 Plan by Chalene Johnson, and this recipe also works with our keto quick start guide.

This Keto Bacon Avocado Chicken Salad is one of our favorites regardless if we are doing a keto phase or not!! It is the best avocado chicken salad recipes that we’ve had because the avocado makes it so creamy and, hello!?!, there’s bacon!!  

This scrumptious chicken, avocado, bacon salad with a little zing of the lemon vinaigrette is super easy to make!! We are sure this wholesome, real food recipe will be one that the whole family will love regardless if they are keto-ing or not!

What You’ll Need to Make Keto Bacon Avocado Chicken Salad

Main Dish: 

  • 8 slices bacon
  • 2 avocado diced
  • lemon juice (approximately 2 tbsp)
  • 1 cup diced baked or grilled chicken breasts

Lemon Vinaigrette

  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1/4 tsp dried oregano
  • 1/4 tsp garlic powder
  • Salt and fresh ground pepper, to taste

Optional

  • cilantro
  • sour cream
  • jalapeños

It’s super simple to make the keto bacon avocado salad!!

 If you’re starting with raw chicken, get it baked & chop it up.  

I did one breast in a 350 oven for about 25 to 30 mins.  Make sure it’s done.  You can check internal temp using a baking thermometer.  It should be 165 degrees. 

TIP:  You can use leftover chicken, grilled chicken, canned chicken, or even a rotisserie chicken.  

Cook up your bacon and crumble it up

TIP:  You can do this in a frying pan, but I prefer to use the microwave.  You do about 1 minute per slice depending on the wattage of your microwave.

Dice up the avocado & place diced pieces into a bowl

TIP:  Cut the the avocado in half, and remove the seed by wacking it pretty hard with a knife so that it sticks to the knife.  Then you can cut vertically and horizontally while the fruit is still in the skin.  You can then scoop out the diced pieces of avocado with a spoon.

Add chicken, bacon, your optional jalapeños (who are we kidding? are they ever optional?!?) to the bowl of avocado and gently stir together and set aside.

Now the Dressing to your Avocado Chicken Salad with Bacon!!

Whisk all the dressing ingredients together (not too hard, huh?)

The Final Step to your keto chicken avocado salad!!

Pour the dressing over the bowl of chicken, avocado, bacon, and jalapeños and gently combine.

So how do you serve this avocado chicken salad?  

You can add a dollop of sour cream, some green onions, maybe some more jalapeños over a bed of lettuce or a lettuce wrap.  I personally like the Ole Xtreme Wellness High Fiber tortillas.  They come in at 4 net carbs, so they fit well into my keto phase.

How long does the Avocado Chicken Salad with Bacon last?

Well, y’all probably know avocados are tricky little boogers.  They can go from not ripe to overly ripe in a blink.  Now, you’ve cut it open and exposed it to the air, so you know it’s going to brown even with the lemon juice.  

It will be good for 3 days in the fridge in an air-tight container, but it might not look too pretty after the first day.

Can you freeze it?

Hmm…I wouldn’t.  I don’t think the avocado would hold up well.

Can you take it with you on the go?

Yes, this makes a great lunch, but you do need to keep it chilled to protect the chicken.  You don’t want any bacteria growing.  That would be bad and cause some belly issues, and none of us wants that!

Cook Time 30 minutes
Total Time 55 minutes

Ingredients

Main Dish:

  • 8 slices bacon
  • 2 avocado diced
  • lemon juice (approx 2 tbsp)
  • 1 cup diced baked or grilled chicken breasts

Lemon Vinaigrette:

  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice

  • Salt and fresh ground pepper, to taste

Optional:

  • cilantro
  • sour cream
  • jalapeños

Instructions

  1. Bake your chicken ay 350 for approx 30 minutes until done.. 165 internal temp. Dice up once cooked. Set aside.
  2. Fry bacon either stove top or microwave and crumble. Set aside.
  3. Dice up avocado and drizzle with lemon juice.
  4. Place chopped chicken, crumbled bacon, and jalapeños, if desired, to the bowl of diced avocado and gently combine.
  5. Now, whisk together your dressing ingredients and pour over your avocado, chicken mixture. Gently mix all together.
  6. Serve over a bed of lettuce, as a lettuce wrap, or use a low-carb tortilla like the Ole Xtreme High Fiber tortillas that we like.
  7. Refrigerate leftovers in air-tight container, and eat within a couple of days.

Notes

You can top with cilantro, sour cream, green onions.

Chill the leftovers. Make sure to drizzle the avocado with the lemon juice to help it from turning brown.
