This easy keto taco casserole recipe is perfect for Taco Tuesday and any low carb diet! The recipe is loaded with tons of cheese and Mexican flavors, and it’s a great meal for the whole family! The best part? It’s ready in just 30 minutes!! Making it great for busy weeknights!
These delicious tacos have become one of our new favorite meal prep keto meals to make! At only 11 net carbs, this Mexican casserole packs a ton of vegetables with fresh toppings, lean protein with taco meat, and fat with all of these cheeses!
We love that with a keto diet, you can still enjoy Mexican food! Plus, this recipe is also gluten-free! So it can be a great recipe for those with food allergies as well!
Low Carb Taco Casserole Recipe
This recipe isn’t just for people following a keto diet. If you’re counting carbs, this low carb casserole is just 11 net carbs and packs 7 grams of fiber!
What You’ll Need
All you need equipment wise is a large skillet. We like to use a cast iron skillet, but a non-stick one will work as well.
While using a skillet is the preferred method of making this recipe, you could use a traditional casserole dish.
We chose to use a skillet because it just keeps things super easy! All you need is one skillet versus a bunch of different mixing bowls or fancy appliances.
Keto Casserole Ingredients & Toppings
This keto taco salad casserole doesn’t require a ton of special ingredients! You may even have most of them in the fridge already!
- 1 lb package of ground beef (80% preferably)
- Olive Oil (optional)
- Onion
- A packet of taco seasoning (I used Old El Paso, but you could make homemade taco seasoning as well!)
- 1 Bell pepper
- 10 oz can of tomatoes and diced green chiles (I used Rotel)
- 3 cups of spinach and kale mix
- 1.5 c shredded cheese (I used Cheddar & Monterey Jack Cheese)
- Jalapeños (optional)
- Avocado
- Whole sour cream
- Lime
You could also use red peppers if you wanted! You could also use Pepper Jack Cheese if you wanted more spice!

We topped our tacos with sour cream and avocado, but you could also add your favorite toppings!
Some ideas include:
- cauliflower rice
- black olives
- green onions
- tortillas
Can I Make Turkey Taco Casserole?
You could substitute the ground beef mixture for turkey for this low carb keto taco casserole recipe if you wanted. With that said, we like using ground beef as our keto taco meat because it has more flavor.
If you choose to use ground turkey, we recommend choosing a higher fat option and add some additional spices to up the flavor and heat. We added a tsp of garlic powder and chili powder.
How To Make
- Chop your onion and bell pepper or use a food processor to dice them up
- Then start browning the ground beef mixture on medium-high heat (optional: brown with 1 tbsp olive oil)
- Add in the chopped onion and chopped bell pepper. The burger doesn’t have to be completely brown at this point because it will continue to cook.
- Cook mixture until the onions & peppers are soft
- Drain fat and any extra liquid
- Stir in tomatoes and green chilis
- Stir in taco seasoning
- Add in spinach and cook into well wilted
- Top with cheese
- Turn heat down to low, allow to simmer until cheese is melted
- Top with jalapeños & chopped up avocado
- Sprinkle lime juice over the top to flavor & protect the avocado color
Now, time to eat up!!
You can let everyone pick their own way for fun. I chose to do a burrito with Ole Extreme Wellness High Fiber/Carb Lean flour tortilla. You could also choose to use a corn tortilla or no tortilla at all!
Storing Your Leftovers
This easy keto taco casserole recipe makes 6 servings, and it’s delicious the next night as well! We store any leftovers in an airtight container and place them in the refrigerator.
Are corn tortillas keto?
Corn tortillas aren’t exactly keto, but they are low in carbs and are lower in carbs that flour tortillas. We recommend checking the carb count for each brand if you following a low carb diet.
